The team has built a concept that is well on its way to lighting a fire throughout the Denver cocktail scene. The innovation behind their craft is fueled by artistic freedom and tasty mediums; a model that any respectable bartender can envy.
For the Gaetano’s Cocktail Evolution, the team introduces a new ingredient and something that is worth giving a thought—Time. There are three stages in the process of creation, each stage responsible for adding a uniquely distinctive characteristic to the final product. The paramount of this cocktail is that each stage can be enjoyed independent of each other.

Step 1: Gaetano’s Cocktail
Their cocktail begins with the signature Gaetano’s Cocktail straight out of the tap [yup, tap]. The Gaetano’s Cocktail is a blend of CapRock Organic Gin, Aperol, Punt E Mes, and finished with sweet vermouth and lavender & sage-spiced honey. Enjoy or proceed to next step.
Step 2: Aging
Poured straight from the spout to the barrel, The Gaetano’s Cocktail finds itself at home in the charred Wild Turkey Barrel that sits behind the bar. Step 3: Gaetano’s Cocktail Evolution
The final step in the creation of this cocktail requires filling a charred and smoked coconut with the Aged Gaetano’s Cocktail. By introducing the cocktail to the coconut, it relaxes and balances the flavor by adding a distinct sweetness and a soft texture. From there, it is served how you like, but recommended with a spray of flamed Chartreuse and an orange expression on the rim. Enjoy.
